I'm currently with Site Underground but I would like to change to gmail. How do I do that?

You will need to subscribe to Google Workspace to use your custom domain email in gmail.

Siteground has FAQs on that: https://world.siteground.com/kb/category/google-workspace/

I created a Google workplace account, now how do I navigate away from Site Underground as my "domain admin" to Google workplace? The domain is registered with GoDaddy--not Site Underground. Maybe I'm confused on which is which, but I'd like to delete Site Underground being associated with my WordPress account.

Do note that you will still need to use siteground for your Wordpress hosting. You can only optionally shift the email hosting to Google Workspace, which has extra charges.

In your Google Workspace admin console, you will need to add your domain & verify it. Then next, they will ask you to go to your domain registrar to add MX record, so that the email hosting will point to Google.

If I’m not wrong, the MX record need to be set up at Siteground. Not Godaddy. You may confirm that with the siteground support team.

Once Google verified that the MX record is set up correctly, then you can start log in using gmail.
**You will need to add new user in Google workspace, which act as the new login in gmail.
